Recipe: Pici with Black Cabbage Pesto by Chef Rachele Meucci

During the cold of January, let a bit of traditional Italian cooking warm your day. Chef Rachele Meucci, at Il Porrina, in Casole d’Elsa, shared her pasta recipe of Pici with black cabbage pesto, dried onion, and roasted chickpeas. Ingredienti per 6/8 persone
300gr di cavolo nero
1/4 spicchio di aglio
Olio extra vergine d’oliva
1 pugnetto di mandorle senza buccia
2 filetti di acciuga
70gr di parmigiano grattugiato
1 cipolla bianca
250 gr di ceci precotti
Sale e pepe
Ingredienti per i pici:
300gr farina 0
150 ml acqua calda
1 cucchiaio olio extra vergine d’oliva
1 pizzico sale
Olio di semi per la spianatoia q.b.
Preparazione dei pici
Mettere su una spianatoia di legno la farina a fontana, aggiungere un pizzico di sale, l’acqua calda e l’olio. Impastare con le mani fini ad ottenere un panetto liscio.
Coprirlo con la pellicola trasparente e lasciarlo riposare per 30 minuti.
Una volta trascorso il tempo di riposo riprendere l’impasto e tagliarlo di tre pezzi, spianarlo non troppo sottile con un mattarello liscio.
Tagliare la pasta già spianata con un coltello a lama liscia, all’altezza di 1 cm circa, dando la larghezza delle classiche tagliatelle, poi una striscia alla volta rotolarla sulla spianatoia unta lavorandola con i palmi delle mani fini ad ottenere dei vermicelli lunghi e sottili.
Lasciarli asciugare sulla spianatoia e spolverarli di farina per non farli appiccicare.
Preparazione del pesto
Pulire le foglie del cavolo, lessarle in acqua bollente e salata per circa 3 minuti. Scolarle, mettere nel mixer insieme ad aglio, mandorle, acciughe, parmigiano e procedere fino ad ottenere un composto cremoso.
Preriscaldare il forno a 70 gradi.
Pulire la cipolla e tagliarla a rondelle. Adagiare le rondelle su una teglia ricoperta di carta da forno facendo attenzione a non sovrapporle. Lasciarle cuocere per 4 ore, meglio se in modalità ventilato. La cipolla sarà pronte quando avrà perso tutta la parte liquida. Dopodiché spezzare le rondelle con le mani.
Adagiare su una teglia da forno 250 gr di ceci precotti, spolverare con del sale e pepe e tre cucchiai di olio. Mettere in forno a 200 gradi per 10 minuti.
Mettere dell’acqua in una pentola fino a farla bollire, salare e poi adagiarvi i pici.
Una volta cotti i pici, unirli al pesto di cavolo nero e amalgamarli in una ciotola. Impiattare, decorare con cipolla essiccata e ceci arrostiti.

300g of black cabbage
1/4 clove of garlic
Extra virgin olive oil
1 handful of peeled almonds
2 anchovy fillets
70g of grated parmesan
1 white onion
250 g of pre-cooked chickpeas
Salt and pepper
Ingredients for pici
300g flour
150ml hot water
1 tablespoon extra-virgin olive oil
1 pinch salt
Seed oil for the pastry board to taste
Preparation of pici
Place the flour on a wooden pastry board and add a pinch of salt, hot water, and oil. Knead with your hands to obtain a smooth dough. Cover it with cling film and let it rest for 30 minutes.
Once the resting time has passed, take the dough and cut it into three pieces, flatten it–not too thinly–with a smooth rolling pin.
Cut the rolled pasta with a smooth-bladed knife, at a height of approximately 1 cm, giving the width of the classic tagliatelle, then roll it one strip at a time on the greased pastry board, working it with the palms of your hands until you obtain long, thin ‘worms’.
Leave them to dry on a pastry board and dust them with flour so they don’t stick.
Preparation of pesto
Clean the cabbage leaves and boil them in salted water for about 3 minutes. Drain and place in a food mixer with garlic, almonds, anchovies, and parmesan; proceed until you obtain a creamy mixture.
Preparation of dried onions
Preheat the oven to 150 degrees.
Clean the onion and cut it into slices. Place the rounds on a baking tray covered with baking paper, careful not to overlap them. Leave them to cook for 4 hours, preferably in ventilated mode. The onion will be ready when it has lost all liqud. Once properly dried, break up the dried slices with your hands.
Prepare the dish
Place 250g of pre-cooked chickpeas on a baking tray, sprinkle with salt and pepper, and three tablespoons of oil. Place in the oven at 400 degrees for 10 minutes.
Put water in a pan until it boils, add salt, and then place the pici in it.
Once the pici are cooked, add them to the black cabbage pesto and mix them in a bowl. Plate and decorate with dried onion and roasted chickpeas.
