It is Carnival! A time for disguises, jokes, parties, and of course, delightful food. Among the traditional delicacies are frittelle, or fritters, made all over Italy for these festivities. The chefs at The Cooking Touch have graciously shared the recipe for their delicious ‘Castagnole’ fritters with raisins:

Ingredienti per 6/8 Persone
250 g ricotta
3 uova
175 g farina 00
3 cucchiai di zucchero
1 buccia di arancia
1 pizzico di sale
8 g lievito per dolci
1/2 mela
1 cucchiaio rum
100 g uvetta
1 litro di olio di girasole o arachidi per friggere
Zucchero a velo per guarnire

Preparazione

Sbattere la ricotta con le uova, aggiungendo le uova una alla volta. Quindi aggiungere farina e zucchero e continuare a mescolare. Grattugiare la buccia d’arancia e la mezza mela e aggiungere al composto.

In un recipiente a parte, ammorbidire l’uvetta in acqua per mezz’ora. Toglierle dall’acqua, strizzare e asciugare con un panno. Aggiungere un pizzico di sale e il rum al composto creato precedentemente. Aggiungere l’uvetta e, per ultimo, il lievito.

Friggere il composto aiutandosi con un cucchiaino in olio bollente (170 ‘C) per creare delle piccole frittelle.

Quando le castagnole saranno dorate, scolare con una schiumarola e far raffreddare su un panno carta.

Guarnire le castagnole raffreddate con zucchero a velo.

Ingredients for 6/8 people

250 g ricotta cheese
3 eggs
175 grams flour
3 tablespoons of sugar
1 orange peel
1 pinch of sale
8 g of baking powder
1/2 apple
1 tablespoon of rum
100 g raisins
1 liter of sunflower or peanut oil for frying
Icing sugar for garnish

Preparation

Beat the ricotta with the eggs, adding the eggs one at a time. Then add flour and sugar and continue mixing. Grate the orange peel and half an apple and add to the mixture.

In a separate bowl, soften the raisins in water for half an hour. Remove them from the water, wring out, and dry with a cloth. Add a pinch of salt and the rum to the previously created mixture. Add the raisins and, lastly, the yeast.

Using a large spoon, gently drop small balls of the mixture into boiling oil (Fry the mixture using a spoon in boiling oil (170’C) to create small pancakes. When the fritters are golden, drain with a slotted spoon and leave to cool on a paper towel.

Garnish the cooled fritters with icing sugar.
